What is a Plant Based diet?

At work, my boss was so kind and created this fun plant based (vegan organic) challenge. It was inspired by the Hippocrates Health Institute. The challenge consisting of buckwheat sprouts, green drinks, raw vegetables, more green drinks and lots of support in the form of buckwheat sprouts, almond milk with cinnamon.

Before we were offered the chance to do the challenge, I wanted to do a plant based diet for a week and see how my body responded to it. I was successful for 3 weeks of eating plant based food then I joined the challenge at work. I did not eat any meat or fish for those 3 weeks. I will say I had more energy and I'm happy I challenged myself.

Note to others: Just remember that if you're going to eat salads and plant based food, open your vegetable and fruit spectrum. Iceberg lettuce should never be an option and kale should always be an option. Things like bok choy, bell peppers, dulse seaweed, cucumbers, cabbage variety, garlic, dill, cilantro, parsley, olive oil, sprouted wild rice and celery root were some of the items on the menu during our challenge. In the pictures above, I wanted to show examples of what I ate during my plant based diet. Feel free to use them for meal ideas.
